Vegan No Churn Strawberry Ice Cream

Since I don’t have an ice cream machine yet I have to make easy no churn ice cream. They are only blended, that’s all what I did with my strawberry ice cream. They are totally vegan without any dairy, sugar and artificial sweeteners.

Summer is coming and we tend to eat more ice cream during this season. Hot weather encourages us to eat ice cream. However, in my family we eat ice cream all year long. My boys love this treat. I’ve decided I’ll be making more ice cream at home… healthy ice cream.

This vegan no churn strawberry ice cream have ONLY 3 ingredients. They are made with coconut milk, maple syrup and fresh strawberries. These ice cream have a sherbet consistency. But they don’t taste like sherbet. They are creamy and full of coconut fat. However, water crystals are formed because strawberries are full of water. That’s my observation.

They taste very good, sweet enough. My children really like them. I’m dreaming about ice cream machine and soon I will get one. In the meantime I have to be satisfied with my powerful ninja. The blender that does all of the work for me.

Before eating these strawberry ice cream, just take them out from the freezer and leave it on the counter for awhile. Because they are very hard straight from the freezer. That’s my suggestion.

Ingredients

  • 1 can 14 oz. full fat coconut milk
  • 4 cups whole strawberries
  • 1/4 cup maple syrup

Instructions

  • Blend coconut milk, strawberries and maple syrup until smooth.
  • Freeze for couple hours or overnight.
