Baked Potato Fries with Avocado Aioli
Crispy oven baked potato fries drizzled with avocado and greek yogurt aioli.
Two weeks ago I bought 3 avocados. I wasn’t sure what I am going to do with them. But I thought I’ll think about something. This is me going to the store without a list or any meal planning for the week. Which is mostly like that. I go to the store –> I buy what I want and then I’m thinking what I’m going to do with my produce. I was always like that. I should plan more what I’m going to cook or bake. I have to work on it and maybe make shopping list and have a clear vision what we’re going to eat.
Anyway, I didn’t know what to do with my 3 avocados. I browsed my Pinterest–> like always:) Follow me on Pinterest I pin lots of interesting recipes.
After thinking for couple minutes I’ve decided I will make baked potato fries with avocado aioli. It sounds interesting already! I mostly bake my potato fries because it is healthier that way. I also added some oregano, garlic powder and salt to my potatoes. Simple as that:)
Recently I found avocado oil and I used it for my baked potato fries. It’s 100 % pure, non GMO, naturally refined and cold pressed. It stands high-heat cooking up to 500 F. It is packed with heart-healthy monounsaturated fat.
Baked Potato Fries with Avocado Aioli
Ingredients
Potatoes
- 3 medium-sized potatoes
- 1 Tbsp. avocado oil
- 1/8 tsp. garlic powder
- 1/8 tsp. salt
- 1/2 tsp. dried oregano
Dip
- 1/2 large avocado mashed
- 1/2 cup greek yogurt
- 1/2 tsp. lemon juice
- 1/8 tsp. garlic powder
- salt to taste
Instructions
Potatoes
- Preheat oven to 450 F. Lay parchment paper on a baking sheet.
- Wash potatoes. Cut into wedges.
- In a large bowl mix avocado oil, garlic powder, salt and oregano. Add potatoes and mix with spoon until all potatoes are covered with oil.
- Bake for 30 - 40 minutes.
Dip
- In a small bowl mix avocado, greek yogurt, lemon juice, garlic powder and salt.
- Drizzle baked potato fries before serving.

Now I have to think what I’ll do with the rest of my avocados. Any ideas?

I have to give avocado oil a try. Potato looks yummy. I’m a big fan of potatoes 🙁 it was my second bread in childhood.
For me too. Polish dishes focus mainly on potatoes. They are my favorite. I will always choose potatoes instead of rice, pasta or quinoa.

when at a loss, I just cut it in 1/2…. spoon in a mixture of mayo, sour cream, yorgurt, cayenne, tiny bit of salt & pepper, turmeric, curry powder. and just eat the whole thing for a meal or snack. sometimes, a little simple [lol] is great. just eat it standing in the kitchen and luving it, so wicked good.
