
These delicious baked stuffed red peppers are perfect for any party. Easy to serve and easy to make. Yellow, green or red pepper can be used for this recipe.
Ingredients
4 medium peppers
1 lb ground pork
1 medium carrot
6 medium mushrooms
1/4 cup chopped green onions
1 Tbsp. mayonnaise
2 Tbsp. Sunflower oil
Salt
Pepper
Water
Instructions
Wash all vegetables. Cut top part of the peppers and clean all the seeds inside. Set aside. Shred carrot and mushrooms in a medium bowl. In a large bowl mix meat very well with green onions, mayonnaise, shredded carrot and mushrooms. Add salt and pepper or your favorite seasoning. Stuff peppers with meat. In a baking pan put nicely stuffed peppers; they have to stand. Pour water to the baking pan (it needs to cover about 1/2″ of the bottom of peppers). Add oil to the water. Cover peppers with aluminium foil. Bake 350 F covered for 1 hour, after that uncover and broil for 5 minutes.
