Ingredients

Zucchini Fries

  • 2 cups panko breadcrumbs
  • 1/2 tsp. salt
  • 1/3 cup all-purpose flour
  • 2 eggs
  • 2 tsp. milk
  • 2 zucchini quartered, lengthwise

Garlic Dip

  • 1 cup plain greek yogurt
  • 1/4 tsp. salt
  • 4 Tbsp. green onion chopped
  • 2 garlic cloves minced

Instructions

Baked Zucchini Fries

  • Prepare baking sheet with parchment paper, coat with nonstick spray and preheat the oven to 400 F (200 C).
  • In a large bowl combine panko breadcrumbs and salt. Set aside.
    2 cups panko breadcrumbs, 1/2 tsp. salt
  • In a large bowl add all-purpose flour.
    1/3 cup all-purpose flour
  • In a medium bowl beat eggs with milk using fork. Set aside.
    2 eggs, 2 tsp. milk
  • Dredge zucchini fries first into flour shaking the excess, dip in beaten eggs, then coat with panko breadcrumbs.

  • Bake zucchini fries for about 20 minutes until they are crunchy and brownish.

Air Fryer Zucchini Fries

  • Set the Air Fryer on 350 F (175 C) and time for 10 minutes until crispy. Place fries side by side in Air Fryer basket and spray with cooking oil. You might need to do it in batches if your basket is small. Try not to stack fries on each other.
