Homemade tomato basil soup made with fresh carrot and parsnip. Easy and healthy creamy tomato soup will be yummy for lunch.

A delicious soup made with fresh tomato and few other veggies like carrot and parsnip. Seasoned with garlic and topped freshly chopped basil and whipping cream.

Simplicity: one of the easiest soups that you can make. Cook it, then blend it.

How to make Homemade Tomato Soup

  1. Firstly gather all ingredients: butter, tomato paste, beefsteak tomato, carrot, parsnip, garlic powder, salt, chicken broth and basil.
  2. Melt butter in a saucepan, add tomato paste, cook for 3-5 minutes.
  3. Add diced beefsteak tomato, carrot, parsnip, garlic powder, salt and chicken broth. Cook for 45-55 minutes.
  4. Blend with immersion blender.
  5. Top it with fresh basil.

Tips to make Easy Tomato Soup

  • You can remove the skin from tomato. Boil about 2 cups of water, pour boiling water over tomato, peel the skin. This is very easy trick and always works.
  • I used my immersion blender similar to this one but if you don’t have it, use regular blender, pour the soup to the blender and blend. I use my ninja blender for all my blending needs.
  • You can make your own chicken broth or you can buy at the store.
  • If you would like you can add 3/4 cup of whipping cream to the blended soup, it makes the soup more rich. However, without whipping cream is still delicious.

What goes with tomato basil soup? You can serve the soup with white or brown rice, any type of pasta, couscous, quinoa, grilled cheese sandwich or dinner rolls.

Can I make the soup vegan or vegetarian? Yes, you can use olive oil instead of butter and water or vegetable broth instead of chicken broth. You can also add coconut milk.

Can you thicken tomato soup? The soup is already thicker since blended veggies thickens the liquid. However, if you prefer thicker consistency, you can make a slurry of cornstarch, then add it to the soup.

Ingredients

  • 1 Tbsp. unsalted butter
  • 5.5 oz. tomato paste 1 can
  • 1 beefsteak tomato diced
  • 1 carrot sliced
  • 1 parsnip sliced
  • 1/2 tsp. garlic powder
  • 1/2 tsp. salt
  • 5 cups chicken broth homemade or store bought
  • 3 Tbsp. basil fresh, chopped

    I’ve been meaning to get more brown rice in my diet since it’s rich in magnesium. Have you been hearing of all the benefits of magnesium lately? Almost as many as tomatoes and soup. 🙂 Thanks for the inspiration.
