After making smoothie with kale I wanted to experiment and make some more recipes with this type of veggie. I know now that we can eat raw or cooked. I like both ways. I already made pasta with kale, raw smoothie and now this kale salad.

I added some red onions, cooked frozen corn and garlic. It was very tasty. New flavor and crunchiness for me.

Kale has more crunchy taste than lettuce. I read some facts about this veggie and I found out that it’s packed with lots of nutrients. It’s good for you, me and everybody. I know that I should have more kale in my diet, as well as my children.

I make smoothies with spinach for them often, so now it’s time to make more kale smoothies.

I’ve made a lot of this kale salad, so it lasted for us two days. I can honestly say it was even better the next day. The kale sauteed overnight in sauce made with garlic and lime juice. I also gave an extra flavor to the kale salad by adding cilantro. Whole combination was a WIN-WIN situation. Yummy…

Corn and Kale Salad

Ingredients

Salad

  • 3 cups kale chopped
  • 1/2 cup chive chopped
  • 2 1/2 cups corn frozen & cooked
  • 1/2 cup cilantro chopped

Dressing

  • 1/4 cup olive oil
  • 1 lime
  • 1 clove of garlic
  • 1/4 tsp. salt

Instructions

  • In a large bowl mix kale, chive, corn and cilantro.
  • In a small glass container add olive oil. Squeeze lime juice and add it to the olive oil. Add pressed or shredded garlic and salt. Mix together.
  • Add dressing to the salad and mix.

    This looks soo good! I normally don’t like kale but the cilantro and lime mixed with it sounds like it would be awesome!

    I love raw kale in salads. I think it holds the dressing much better than other salad leaves do.

    I’ve cooked with kale before, but never used it as the base of a salad. I like the idea of corn as a topping!
