- Beat the egg whites with an electric mixer until soft peaks form, gradually adding the sugar. Add the lemon juice and mix until combined.
- Shape the mixture into 12 cookies and bake for 1 hour and 20 minutes at 225 F (110 C).

Next, add a layer of strawberry sauce, then repeat with more whipped cream and another drizzle of delicious berry sauce. Finish by decorating the top with extra meringue cookies and a little orange zest for a bright and fresh touch.

I don’t recommend preparing Eton mess very far in advance, as the meringue will soften once it comes into contact with the whipped cream, losing crunchiness. If you’re making this dessert for a party, it’s a good idea to bake the meringue cookies a day ahead so they’re ready to use. For the best texture, you can assemble the dessert just before serving. However, if you don’t mind the meringue becoming soft, the assembled Eton mess can be stored in the refrigerator for approximately 2 – 3 days, just remember that the texture will be more creamy than crunchy.
Eton mess can last about 2 – 3 days when stored in the refrigerator, but it’s important to remember that the meringue cookies will gradually soften and almost dissolve into the cream and fruit, this will change the texture of the dessert. I’ve personally stored Eton mess in the fridge for around 2 days, and it was still very yummy. The flavors remained fresh and the dessert was enjoyable, but the meringue lost its original crispness.
The meringue cookies can easily be made up to 2 days in advance, which makes preparation much easier. I usually bake them the day before I plan to serve the dessert and then leave them to cool overnight in the oven. This slow cooling process helps them become crisp on the outside while remaining light and airy inside. Having them ready ahead of time means less stress on the day you’re serving the Eton mess, and you can focus on assembling the dessert quickly and beautifully.

Ingredients
Meringue Cookies
- 4 egg whites
- 3/4 cup granulated sugar or cane sugar
- 1 tsp. lemon juice freshly squeezed
Whipped Cream
- 25 strawberries
- 1/2 orange
- 1 Tbsp. granulated sugar or cane sugar
- 2 cups whipping cream
- 3 Tbsp. powdered sugar
Instructions
Meringue Cookies
- Preheat the oven to 225 F (110 C) and line a large baking pan with parchment paper.
- In a large glass bowl, beat the egg whites with an electric mixer on low speed until soft peaks form.4 egg whites
- Gradually, add the sugar and continue mixing until the peaks are stiff and glossy. Stir in the freshly squeezed lemon juice.3/4 cup granulated sugar, 1 tsp. lemon juice
- Use a large spoon to form about 12 cookies on the prepared baking tray, a dollop of the egg white mixture placed onto the parchment paper.
- Bake for 1 hour and 20 minutes. After baking, turn off the oven and leave the meringues inside to cool, usually for at least 3 hours. For the best results, leave them overnight in the turned off oven.
- The Eton mess can be prepared the following day using these crisp, airy meringues.
Whipped Cream
- Remove the stems from the strawberries and place them in a large bowl. Mash the strawberries with a potato masher or fork, leaving some larger pieces for the texture, you don’t need to mash them completely.25 strawberries
- Grate the zest from half of the orange and set it aside. Squeeze the juice from the orange and add it to the mashed strawberries. Add the sugar and gently mix with a spoon. Set aside.1/2 orange, 1 Tbsp. granulated sugar
- In a large bowl, combine the whipped cream, powdered sugar, and orange zest. Beat the cream until soft peaks form, being careful not to overwhip.2 cups whipping cream, 3 Tbsp. powdered sugar
- Crush about 7 meringues into small pieces and fold them gently into the whipped cream. Reserve the remaining meringues for decoration.
Eton Mess
- Prepare 5 – 6 serving glasses.
- Spoon about 2 tablespoons of the whipped cream mixture into the bottom of each glass. Add about 2 tablespoons of the strawberry sauce on top. Add another 1-2 tablespoons of whipped cream and a few pieces of strawberries. Decorate the top with the remaining meringue cookies.
