Eton mess recipe with crunchy meringue cookies, whipped cream and berry sauce. Strawberry eton mess trifle is one of the best desserts you can have.

What is Eton Mess? It is a traditional English dessert made with crushed meringue, whipped cream and different summer fruits. However, strawberries are used the most for this treat.

Eton Mess Recipe

Texture: soft, silky, smooth whipped cream and crunchy meringues.
Taste: sweet with strawberry flavor.
Simplicity: the most difficult step will be to make meringue cookies. Otherwise, it is easy to make the whole dessert.
Meal Type: dessert, Valentine’s Day, New Year’s Eve. 

How to make Eton Mess

  1. Firstly, gather all ingredients to make meringue cookies: egg whites, sugar and lemon juice.
  2. Beat egg whites with electric mixer until soft peak adding sugar gradually. Add lemon juice.
  3. Form 12 cookies and bake for 1 hour and 20 minutes at 225 F.
  4. Get the rest ingredients: strawberries, orange, sugar, whipping cream and powdered sugar.
  5. Scrape the orange zest from 1/2 of the orange.
  6. Mash strawberries, add juice from orange and sugar, mix with a spoon.
  7. Beat the whipped cream and powdered sugar until soft peak.
  8. Mix whipped cream with meringue cookies.

Strawberry Eton Mess Trifle Tips

  • What to do with egg yolks? You can make my delicious Key Lime Pie.
  • If you don’t want to bake meringue cookies you can certainly buy them at the store.
  • How to assembly the trifle? Mix whipped cream with crushed meringue, put few spoons on the bottom of the glass. Add strawberry sauce, again whipped cream and berry sauce. Decorate with leftover cookies and orange zest.
  • Make strawberry eton mess trifle just before eating, meringue cookies will be crunchy.
  • Buy few small meringue cookies for decoration (optional)

Dessert Faq’s

Can Eton Mess be prepared in advance? I don’t suggest preparing eton mess in advance. The meringue will become soft once they are dipped in whipped cream. If you are making this dessert for a party, you can bake meringue cookies a day ahead. If you don’t mind meringue cookies to become soft, the dessert can be stored for 1 – 2 days in a refrigerator.

How long does Eton mess last in fridge? It will last about 2 – 3 days, but keep in mind that meringue cookies will become soft, they will almost dissolve. I personally stored eton mess in the refrigerator for about 2 days, the dessert was good.

How far in advance can you make meringue cookies? They can be made 2 days ahead. I usually bake them the day before and leave them overnight in the oven.

How long does it take to whip cream? About 5 minutes. You can also whip the cream 1-2 days ahead.

Can you whip cream too much? Yes, you can, so try not to over beat the whipped cream. If you suspect cream is whipped too much, add few spoons of fresh whipping cream and mix for few seconds just to combine.

Ingredients

Meringue Cookies

  • 4 egg whites
  • 3/4 cup sugar
  • 1 tsp. lemon juice freshly squeezed

Whipped Cream

  • 25 strawberries
  • 1/2 orange
  • 1 Tbsp. sugar
  • 2 cups whipping cream
  • 3 Tbsp. powdered sugar

Instructions

Meringue Cookies

  • Preheat oven to 225 F. Prepare large baking pan with parchment paper.
  • Beat egg whites in a large glass bowl with electric mixer on low speed until soft peak. Add sugar gradually. Mix until soft pick. Mix in freshly squeezed lemon juice.
  • Use large spoon to form about 12 cookies and place on a tray. Just simply put a dollop of prepared egg whites. Bake for 1 hour and 20 minutes. After that time turn off the oven and leave meringues inside. Usually for at least 3 hours. The best is to leave it overnight in the turned off oven. Prepare eton mess the next day.

Whipped Cream

  • Remove the stems from the strawberries and place them in a large bowl. Mash with potato masher or fork. Leave some larger pieces and mash some. You don't have to mash strawberries completely.
  • Scrape the orange zest from 1/2 of the orange. Set aside. Squeeze the juice from orange. Add to strawberries. Add sugar to strawberries, mix with a spoon. Set aside.
  • Pour whipped cream, powdered sugar and orange zest into the large bowl. Beat the whipped cream until soft peak. Do not over beat.
  • Crush about 7 meringues into small pieces. Fold into the whipped cream. Leave the rest meringue for decoration.

Eton Mess

  • Prepare about 5-6 glasses. Pour about 2 Tbsp. of the whipped on the bottom of the glass. Add about 2 Tbsp. of strawberry sauce on top. Again some (about 1-2 Tbsp.) whipped cream, strawberries on top. Decorate with the rest of meringue cookies.
