Fall Recipe: Apple Cake
Perfect recipe for fall: Apple Cake. It is one day after Halloween and we ate a lot of candies. The weather was nasty, it was raining all day but it did not stop children to go “Trick or Treat”. I just love watching children in their costumes:) I just have to see exactly what costumes they are wearing. Now we are approaching into Thanksgiving Season. For me Thanksgiving is associated with family gathering, spending time together and eating delicious food. This recipe is perfect for Autumn! Apples are delicious and there are many ways to eat them. Apple Cake recipe that I made is very well known in my family.
Fall Recipe: Apple Cake

Ingredients
- All ingredients has to be at room temperature:
Cake Layer:
- 2 1/2 cup flour
- 2 Teaspoons baking powder
- 2 butter sticks about 8 oz. total
- 1/3 cup sugar
- 4 egg yolks
- 3 Teaspoons half and half
- pinch of salt
Apple Layer:
- 3 lbs. apples
- 2 packages of 3oz. Jell-O Gelatin color orange or yellow
Top Layer (meringue):
- 4 egg whites
- 1/2 cup sugar
Instructions
Cake Layer:
- Mix flour with butter and baking powder. Add sugar, egg yolks, half & half and pinch of salt. Combine all ingredients together very well with your hands. Prepare a 13 x 9 pan. Lay nicely the cake with your hands on the bottom of the pan. Set aside for awhile.
Apple Layer:
- Wash and peel the apples. Shred all of them and put in the cooking pan. Add 2 packages of dry gelatin to them and cook on medium heat for 5 minutes until gelatin will dissolve. Add apples on the top of the cake.
Top Layer (meringue):
- In a medium bowl whip egg whites on lower speed with mixer. Start adding sugar gradually and mix all the time; raise the speed of mixer. Whip the egg whites until smooth and thickened into a shiny meringue. Add the meringue on the top of the apples.
- Bake at 350F for 40 minutes, after this time turn off the heat and leave the apple cake inside, after 30 minutes open slightly the door of the stove, give another 30 minutes. After this time you can take out the cake.
