I made carrot salad for lunch the other day and I wasn’t sure what dressing should I use. I had some dressings in my fridge but I wanted to make something from scratch. Before, I made a simple dressing with olive oil, cilantro and lemon juice for my Beans Salad. However, I needed a stronger flavor for my carrot salad, so I thought about honey and mustard combination.

Let me tell you feta with honey mustard dressing is so good. So full of new flavors that I’ve never had before. Totally different than I’m used to it. Just couple simple ingredients that you have in the fridge like honey, mustard and greek yogurt and homemade dressing can be made quickly from scratch. Very healthy addition to your everyday salad.

Carrot is the vegetable that I always have in the fridge. I always add it to my food. However mostly to my soups. I even add it to smoothies as well. Basically everywhere. Wait … soon I will have some carrot cookies to share.

Feta Carrot Salad with Honey Mustard Dressing

Ingredients

Salad

  • 1 cup shredded lettuce
  • 1/2 cup shredded carrot
  • 1/2 cup grape tomatoes cut in half
  • 1/2 cup diced cucumber
  • 1/2 cup diced feta cheese

Dressing

  • 1/4 cup plain greek yogurt
  • 1 Tbsp dijon mustard
  • 2 tsp. honey

Instructions

  • In a large bowl mix lettuce, carrot, tomatoes, cucumber and feta cheese.
  • In a small bowl mix ingredients for dressing: greek yogurt, dijon mustard and honey.
  • Top the salad with honey mustard dressing.

    So colorful and fresh. Carrot salad has come a long way since my sister used to make it with mayo and raisins. haha I hope to get snow peas this spring in the garden so I can make your other salad.

    I do love shredded carrots in my salads! I haven’t tried honey mustard on salad before…just for dipping chicken into! I may give it a whirl!
