Lemon ricotta pancakes are so easy to make. Fluffy, soft and lemon flavored ricotta pancakes are great for brunch, breakfast or even dessert.

Sweet and soft ricotta pancakes with lots of lemon flavor that you can’t resist. Drizzle with maple syrup and top it with fresh fruits like raspberries or strawberries to make it more delicious.

Lemon Ricotta Pancakes Recipe

Simplicity: very easy to make, combine dry ingredients with wet ingredients and cook.

How to make Lemon Ricotta Pancakes

  1. (Full recipe and video below). Prepare all ingredients: all-purpose flour, baking powder, baking soda, sugar, egg, buttermilk, ricotta cheese, lemon juice, vanilla extract and lemon zest.
  2. In a medium bowl combine dry ingredients: flour, baking powder, baking soda and sugar.
  3. In another bowl, mix egg with buttermilk, ricotta cheese, lemon juice, vanilla extract and lemon zest.
  4. Add dry ingredients to wet, mix.
  5. Cook pancakes on frying pan until bubbly, then flip.

Lemon Pancakes Tips

  • You can add more sugar if you prefer sweeter pancakes, however since they are served with maple or even honey, they will be sweet enough.
  • Add extra lemon juice if you want more lemon flavor, but I think there is sufficient lemon flavor.
  • What to serve it with? Add your favorite maple syrup, drizzle with honey or sprinkle with powdered sugar. Add some fresh fruits or top it with jam.

Ricotta Pancake Faq’s

What’s the best way to cook pancakes? Heat your griddle or frying pan, spray with a little oil or brush with oil, pour about 1/4 to 1/3 cup of the batter, cook until bubbly, then flip. Once it’s flipped you can cover the pan to cook faster.

Do you cook pancakes on high or low heat? Low to medium heat is the best to cook this pancake.

What are ricotta pancakes? The simple way to explain, they are made with ricotta cheese, simply add ricotta to the batter and cook. It makes the pancake fluffy and soft.

Ingredients

  • 1 cup all-purpose flour
  • 2 Tbsp. sugar
  • 1 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1 egg
  • 3/4 cup buttermilk
  • 1/2 cup ricotta cheese
  • 2 Tbsp. lemon juice
  • 1/2 tsp. vanilla extract
  • 1 lemon zest

  • 1 Tbsp. cooking oil

Instructions

  • In a medium bowl combine flour with sugar, baking powder and baking soda, set aside.
  • In another bowl mix egg with electric mixer, add buttermilk, ricotta cheese, lemon juice, vanilla extract and lemon zest from 1 lemon.
  • Heat the lightly oiled frying pan on a medium heat. Pour about 1/4 to 1/3 cup of the batter into the frying pan. Cook for 2-5 minutes. Flip when bubbles will form on the pancake. Cover and cook for another 2- 5 minutes.
