I was a the store the other day and I saw endive. I wasn’t sure what it is because I’ve never tried it. But I thought I’ll buy it and I’ll figure it out something —> like always. So after couple of days I thought I have to do something with my endive. Mediterranean couscous salad came to my mind.

I checked the endive leaves and I realized they are sturdy and I thought it will be easy to stuff something in it. I looked around and I’ve decided to go with couscous, cucumber, tomato and Mediterranean herbs. I just didn’t have olives at home so I didn’t add it. But you can do this. I’m just not a huge fan of them.

I had lots of fresh parsley at home and it perfectly suited my salad. So much flavor from parsley, red onion, herbs like basil, rosemary and Italian seasoning . Mediterranean couscous salad is delicious, healthy and vegetarian. Perfect for side dish at dinner time or a party when guests can grab easily one endive leaf. It is great also for light lunch any day of the week.

Mediterranean Couscous Salad in Endive Leaves

Ingredients

Salad

  • 1 cup cooked couscous
  • 1/2 to mato diced
  • 1/2 cup cumber diced
  • 1/4 cup red onion diced
  • 4 Tbsp. fresh parsley chopped
  • 1 - 2 endive

Dressing

  • 1/4 cup olive oil
  • 1 Tbsp. lemon juice
  • 1/4 tsp. garlic powder
  • 1/2 tsp. dried rosemary
  • 1/2 tsp. dried basil
  • 1 tsp. Italian seasoning

Instructions

Salad

  • In a medium bowl mix couscous, tomato, cucumber, red onion and parsley. Set aside

Dressing

  • In a small bowl mix olive oil, lemon juice, garlic powder, rosemary, basil and Italian seasoning .

Preparation

  • Add dressing to the salad and mix.
  • Remove leaves from endive. Stuff each leave with salad.
