  • 9 chicken thighs
  • 1 red onion small
  • 2 Tbsp. unsalted butter
  • 1 1/2 tsp. sweet paprika
  • 1 1/2 tsp. garlic powder
  • 1/2 tsp. salt
  • 1/8 tsp. black pepper optional


  • Prepare baking sheet with parchment paper or silpat. Place chicken thighs. Preheat oven to 350 F.
  • Slice the red onion. Set aside.
  • In a small glass container melt butter. 
  • In another small container mix sweet paprika, garlic powder and salt. Add black pepper but this is optional.
  • Marinate the chicken on both sides with butter. Sprinkle seasoning on both sides of chicken thigh.
  • Stuff red onion slices between chicken thighs.
  • Bake for 70 - 90 minutes.

    Unfortunately this got 3 thumbs down from my family, a very bland dish. Anyone who makes it I would double the spice other than the salt. Maybe some smoked paprika might give it a little more flavor. Did have crispy skin though.
