I’ve have some healthy, quick and easy recipe for today. I made this red pepper poached eggs for my breakfast the other day. So–> simply just mushrooms and freshly cut red peppers. Very delicious satisfying breakfast. I omitted the bread because two eggs were enough for me. But go ahead you can have a buttery slice of bread, English muffin or a bun. Mmm, maybe tomorrow I’ll make this healthy breakfast for myself too and I’ll add a slice of whole wheat bread.

I was dieting lately and I was looking for ideas how to cut carbs. I don’t really eat bread or potatoes when I am on diet. That’s why this easy, yummy breakfast was made:)

There are many varieties of peppers, but I like red pepper the most. I don’t really like green peppers. It’s not so sweet and for me it doesn’t have a taste. Red is the best.I like the orange and yellow pepper too. But red is mostly seen at my home. The other pepper that I love is jalapeno! Oh.. I have to make some Mexican dish soon.

Last time I made Spinach Poached Eggs that were so good to. If you like spinach you’ll definitely love this breakfast. On the other hand today’s recipe is made with mushrooms that I also like. I know some of you don’t really like mushrooms, however you can try with spinach if you prefer that way:)

Red Pepper Poached Eggs

Ingredients

  • 1 tsp. butter
  • 3/4 cup sliced mushrooms
  • 2 eggs
  • half red pepper sliced
  • salt/pepper

Instructions

  • In the frying pan melt butter, add sliced mushrooms and saute for 5 minutes.
  • Add sliced red pepper.
  • Crack eggs and pour on the top of mushrooms and red pepper. Season with salt and pepper.
  • Cook covered on low-medium heat for 5 - 10 minutes.

  1. I’m not a big fan of pouched eggs. My egg has to be well done. But my husband loves them. Since we have our own chicken eggs he makes them often. 🙂 I’m the same as you. I always thought the same of green peppers they just have no taste. I love red , yellow and orange peppers too.
