Ingredients Needed

Pomegranate arils, sweet potato, sunflower seeds, lettuce.
  • Sweet Potato – peeled, cubed and roasted.
  • Oil – olive oil is needed for roasting cubed sweet potato.
  • Lettuce – fresh lettuce.
  • Pomegranate Arils – to add extra crunchiness to salad.
  • Sunflower Seeds – add extra nutrients to the salad.

How to Make the Dressing

Apple cider vinegar, olive oil, salt, dijon mustard, honey.
  • Dijon Mustard – this mustard will add spicy flavor.
  • Olive Oil – extra virgin or any other type of olive oil.
  • Apple Cider Vinegar – to add a little sour flavor.
  • Honey – liquid honey to make the dressing sweet.
  • Salt – any salt can be used: Himalayan, sea salt or regular table salt.

Make the dressing in a small bowl by mixing dijon mustard, apple cider vinegar, oil, honey and salt.

How to make Sweet Potato Salad

Ingredients

Salad

  • 1 sweet potato peeled & cubed
  • 1 tsp. oil
  • 3 cups lettuce chopped
  • 1/2 cup pomegranate arils
  • 3 Tbsp. sunflower seeds

Dressing

  • 3 Tbsp. dijon mustard
  • 2 Tbsp. olive oil
  • 1 1/2 Tbsp. apple cider vinegar
  • 1 1/2 Tbsp. honey
  • 1/8 tsp. salt

Instructions

  • Preheat oven to 360 F, prepare baking sheet with parchment paper.
  • Place cubed sweet potato on baking sheet, add oil and mix it.

  • Bake for 15-20 minutes until sweet potato is soft, cool off before adding to the salad.
  • Arrange salad in a large bowl: add lettuce, sweet potato, pomegranate arils and sunflower seeds, set aside.
    3 cups lettuce, 1/2 cup pomegranate arils, 3 Tbsp. sunflower seeds
  • Make dressing in a small bowl or jar, add: dijon mustard, olive oil, apple cider vinegar, honey and salt, mix it.
    3 Tbsp. dijon mustard, 2 Tbsp. olive oil, 1 1/2 Tbsp. apple cider vinegar, 1 1/2 Tbsp. honey, 1/8 tsp. salt
  • Add dressing to the salad, toss it.
