I’ve made these eggs when I was on diet. They were satisfying and full of vegetables like spinach, tomato and parsley. Perfect start of the day. I skipped bread and that’s why I decided to make 2 eggs instead of a one. It was perfect breakfast for me and I still make it for myself.
I like all kinds of eggs.. poached, scrambled, hard-boiled etc. They add lots of protein to the diet. I’m also a spinach fanatic .. therefore eggs + spinach = great combination. Tomato is perfect with eggs too.
I remember when my grandma used to make scrambled eggs with tomato. It was very good and I make it sometimes. I usually peel my tomato before cooking with eggs. I don’t really like cooked tomato with hard skin on it. If it’s raw it’s fine for me but cooked tomato skin is not really tasty for me. If you need a great tip to peel tomato skin easily I’ll tell you, just pour some boiling water on the tomato, leave for couple seconds and peel it with knife. How easy and convenient. Very useful trick in the kitchen that you can try in your kitchen:)

Spinach Poached Eggs
Ingredients
- 1 tsp. butter
- 2 cups fresh spinach*
- 3 slices of tomato
- 2 eggs
- 1 Tbsp. chopped parsley fresh or dried
- salt/pepper to taste
Instructions
- Melt butter on the pan, add fresh spinach and cook on low heat for about 5 minutes.
- Put 3 slices of tomato on the spinach.
- Then crack eggs and lay on the spinach and tomato. Season with salt, pepper and parsley. Cook for about 5 minutes on low-medium heat covered.

I’ve already eaten breakfast but I could totally go for these eggs. Guess I know what’s for lunch! We used to make poached eggs all the time as kids in one of those little pans. I always thought you had to have that special pan to do it. I recently made some in boiling vinegar water but this looks much easier.

This looks delicious and I’ll definitely be trying it out this weekend. There aren’t poached eggs though. To poach something is to cook it in a simmering liquid. Unless there’s something missing from the cooking instructions?

You’re right Erica, maybe I shouldn’t call them poached eggs. But the sauce from butter and mushroom is made and then you crack eggs on top of it. Eggs simmer a little in this sauce.
