In a large bowl combine flour, sugar, baking powder and cinnamon, set aside.

In a large bowl whisk eggs with milk and vanilla extract.

Add dry ingredients to wet, mix with spatula.
Add chopped apples, mix all ingredients together until well combined with spatula or spoon, don't over mix.

Preheat frying pan with oil, you can use candy thermometer if you have one until it reaches 360 F/365 F temperature. Otherwise, heat the oil until hot.

Remove from the pan once fully fried.
Drop about 1/4 cup of the batter to the oil, fry for about 2-3 minutes. Flip and fry for another 2-3 minutes.
Add candy corn and water to the saucepan, cook on low-medium heat for 2-4 minutes, whisk all the time until candy corn will dissolve. Pour the sauce over fritters.
