Ingredients

  • 1 egg white
  • 1/4 cup honey
  • 1 Tbsp. coconut oil melted
  • 1/2 tsp. vanilla extract
  • 2 cups rolled oats
  • 1/4 cup almonds chopped
  • 1/2 cup dates chopped
  • 1/3 cup coconut flakes
  • 1/4 cup dried cranberries

Instructions

  • Preheat oven to 280 F. Put parchment paper or reusable mat on baking pan.
  • In a large bowl beat the egg white, add honey, melted coconut oil and vanilla extract. Add oats and almonds, mix well.

  • Put oats granola on baking pan.
  • Bake for 20 minutes.
  • After 20 minutes, remove from oven. Add dates, coconut flakes and dried cranberries, mix well.

Notes

  • Make sure to whip the egg white really good until foamy, but you don't need to whip until soft peak.
  • What to do with egg yolk? You can make scrambled egg for breakfast, just use 1 full egg plus 1 egg yolk. If you place in the airtight container the egg yolk will be good on the next day. Don't leave it uncovered, because it will dry out. You can also make Key Lime Pie, but this dessert recipe calls for 4 egg yolks, so you will need more than 1 egg yolk.
  • Add your dried fruits and coconut flakes after baking oats, because you don't want to burn them.
  • SUBSTITUTIONS: Any dried fruits can be used, for example: raisins, apricot (chopped), figs, blueberries etc.
  • Other nuts instead of almonds including cashews, hazelnuts, peanuts or walnuts can be used.
  • You can use maple syrup instead of honey.
  • Meal Prep Tips: Store in closed tightly container. You can have it for breakfast or snack with milk or yogurt.
