Caramelized Apples Pumpkin Pancakes

Pancakes
- 1 cup all-purpose flour
- 1 tsp. baking powder
- 1/2 tsp. baking soda
- 1/2 tsp. cinnamon
- 3 Tbsp. brown sugar
- 1 egg
- 3/4 cup buttermilk
- 1/2 cup pumpkin puree
Apples
- 3 apples
- 2 Tbsp. brown sugar
- 3 Tbsp. unsalted butter
- 1/2 tsp. cinnamon
Pancakes
In a medium bowl mix dry ingredients: flour, baking powder, baking soda, cinnamon and brown sugar.
In a separate bowl beat the egg with mixer, add buttermilk and pumpkin puree.
Add dry ingredients to the pumpkin mixture. Mix well until all ingredients are combined together with electric mixer.
Heat the lightly oiled frying pan on a medium heat. Pour about 1/4 to 1/3 cup of the batter into the frying pan. Cook for 2-4 minutes. Flip when bubbles will form. Cover and cook for another 2- 4 minutes.
Apples
Wash, peel and cut apples into cubes. On the frying pan melt butter, add apples and cook for couple minutes, stirring occasionally. Add sugar and cinnamon and cook approximately 10 minutes on a medium heat.
Serve warm pancakes with warm caramelized apple and maple syrup (optional).
