Spinach Poached Eggs

Ingredients

butter

cups
fresh spinach*
3
slices
of tomato
2
eggs

Tbsp.
chopped parsley
fresh or dried
salt/pepper to taste
Instructions
Melt butter on the pan, add fresh spinach and cook on low heat for about 5 minutes.
Put 3 slices of tomato on the spinach.
Then crack eggs and lay on the spinach and tomato. Season with salt, pepper and parsley. Cook for about 5 minutes on low-medium heat covered.
Notes
*Frozen spinach can be used - about 1/2 cup
