Red Pepper Poached Eggs

- 1 tsp. butter
- 3/4 cup sliced mushrooms
- 2 eggs
- half red pepper sliced
- salt/pepper
In the frying pan melt butter, add sliced mushrooms and saute for 5 minutes.
Add sliced red pepper.
Crack eggs and pour on the top of mushrooms and red pepper. Season with salt and pepper.
Cook covered on low-medium heat for 5 - 10 minutes.
