In a large bowl mix flours, sugar, baking soda and baking powder. Set aside
In a small bowl, whisk the eggs. Add buttermilk and melted butter. Whisk all ingredients together util well combined.
Pour the wet ingredients over the dry and mix with a wooden spoon delicately. But try not to over mix it.
Preheat the griddle or a skillet. Oil just a little the pan. Pour about 1 Tbsp. of the batter for each pancake. Cook on low-medium heat for about 1 - 2 minutes. When the batter starts bubbling flip on the other side and cook for another 1- 2 minutes.
Beat the whipping cream with confectioners sugar until soft peaks. Decorate pancakes with whipped cream and peaches.
