Baked Potato Fries with Avocado Aioli

Ingredients

Potatoes

  • 3 medium-sized potatoes
  • 1 Tbsp. avocado oil
  • 1/8 tsp. garlic powder
  • 1/8 tsp. salt
  • 1/2 tsp. dried oregano

Dip

  • 1/2 large avocado mashed
  • 1/2 cup greek yogurt
  • 1/2 tsp. lemon juice
  • 1/8 tsp. garlic powder
  • salt to taste

Instructions

Potatoes

  1. Preheat oven to 450 F. Lay parchment paper on a baking sheet.
  2. Wash potatoes. Cut into wedges.
  3. In a large bowl mix avocado oil, garlic powder, salt and oregano. Add potatoes and mix with spoon until all potatoes are covered with oil.
  4. Bake for 30 - 40 minutes.

Dip

  1. In a small bowl mix avocado, greek yogurt, lemon juice, garlic powder and salt.
  2. Drizzle baked potato fries before serving.
