Baked Potato Fries with Avocado Aioli

Potatoes
- 3 medium-sized potatoes
- 1 Tbsp. avocado oil
- 1/8 tsp. garlic powder
- 1/8 tsp. salt
- 1/2 tsp. dried oregano
Dip
- 1/2 large avocado mashed
- 1/2 cup greek yogurt
- 1/2 tsp. lemon juice
- 1/8 tsp. garlic powder
- salt to taste
Potatoes
Preheat oven to 450 F. Lay parchment paper on a baking sheet.
Wash potatoes. Cut into wedges.
In a large bowl mix avocado oil, garlic powder, salt and oregano. Add potatoes and mix with spoon until all potatoes are covered with oil.
Bake for 30 - 40 minutes.
Dip
In a small bowl mix avocado, greek yogurt, lemon juice, garlic powder and salt.
Drizzle baked potato fries before serving.
