Preheat oven to 350 F. Prepare baking pan with parchment paper.
In a large bowl mix dry ingredients: oat flour, rolled oats, quick oats and baking soda.
In another bowl whisk wet ingredients: egg, vanilla extract, Cocozia coconut oil and maple syrup. Mix with a wooden spoon.
Add wet ingredients to the dry ingredients. And mix.
Fold in raisins
Scoop about 1 tablespoon of batter to form each cookie and lay on baking pan. You can use an ice cream scoop. The batter will be wet, but do not worry.
Bake for about 9 - 11 minutes.
