Gluten Free Banana Muffins

- 1 1/4 cups oat flour
- 1 cup almond flour
- 1 1/2 tsp. baking powder
- 1/8 tsp. baking soda
- 1 tsp. cinnamon
- 1/2 cup coconut sugar
- 2 eggs
- 1/2 cup greek yogurt
- 1 Tbsp. coconut oil
- 1/2 tsp. vanilla extract
- 2 overripe bananas mashed
Preheat oven to 375 F. Prepare muffin baking pan with liners.
In a medium bowl combine oat flour, almond flour, baking powder, baking soda, cinnamon and coconut sugar. Set aside.
In a separate bowl whisk eggs, add greek yogurt, coconut oil] and vanilla extract. Mix with a spoon very well. Add mashed bananas.
Add dry ingredients to wet ingredients. Combine very well with a spoon.
Bake for 25 minutes.
