Gluten Free Banana Muffins

Ingredients

  • 1 1/4 cups oat flour
  • 1 cup almond flour
  • 1 1/2 tsp. baking powder
  • 1/8 tsp. baking soda
  • 1 tsp. cinnamon
  • 1/2 cup coconut sugar
  • 2 eggs
  • 1/2 cup greek yogurt
  • 1 Tbsp. coconut oil
  • 1/2 tsp. vanilla extract
  • 2 overripe bananas mashed

Instructions

  1. Preheat oven to 375 F. Prepare muffin baking pan with liners.
  2. In a medium bowl combine oat flour, almond flour, baking powder, baking soda, cinnamon and coconut sugar. Set aside.

  3. In a separate bowl whisk eggs, add greek yogurt, coconut oil] and vanilla extract. Mix with a spoon very well. Add mashed bananas.

  4. Add dry ingredients to wet ingredients. Combine very well with a spoon.
  5. Bake for 25 minutes.
