Churro Cupcakes

Churro cupcakes with lots of cinnamon and delicious mascarpone and whipped cream frosting great for parties.

Ingredients

Churro Cupcakes

  • 1 1/4 cups all-purpose flour
  • 1 1/2 tsp. baking powder
  • 1/4 tsp. baking soda
  • 1 Tbsp. cinnamon
  • 2 eggs
  • 3/4 cup cane sugar
  • 1/2 cup unsalted butter
  • 1/2 tsp. vanilla extract
  • 1/4 cup milk
  • 3/4 cup greek yogurt

Frosting

  • 1 cup whipping cream
  • 6 Tbsp. mascarpone cheese
  • 1 tsp. cinnamon
  • 3 Tbsp. powdered sugar

Instructions

  • Preheat oven to 350 F and prepare muffin tin with 12 cupcake liners. In a medium bowl combine flour, baking powder, baking soda and cinnamon. Set aside.In a large bowl, using an electric mixer beat eggs with sugar for about 3-5 minutes until smooth. To the mixture add butter, vanilla extract and mix for 3 minutes. Add, milk and greek yogurt. Mix everything very well with electric mixer. Add dry ingredients to the wet and mix until well combined. Fill each cupcake liner full with 3/4 batter. Bake for 15 - 20 minutes or until the toothpick inserted will come out clean. Remove from oven.Before frosting cool cupcakes completely on a wire rack.In a large bowl combine ingredients for frosting: whipping cream, mascarpone cheese, cinnamon and powdered sugar. Beat with electric mixer until soft peak.Frost each cupcake.
