Crockpot Chicken Fajitas

Healthy crockpot chicken fajitas served with avocado and cilantro.

Ingredients

  • 2 Tbsp. vegetable oil
  • 1 onion small
  • 4 chicken breasts
  • 1/2 tsp. onion powder
  • 1/2 tsp. garlic powder
  • 1/8 tsp. chili powder
  • 1/4 tsp. ground cumin
  • 1 tsp. sweet paprika
  • 1/2 tsp. oregano dried
  • 1/2 tsp. sea salt
  • 1 yellow bell pepper
  • 1 orange bell pepper
  • 1 red bell pepper
  • 8 tortillas small
  • 1 avocado large
  • 2 Tbsp. cilantro chopped

Instructions

  • Pour oil on the bottom of the crockpot.
  • Slice onion and add to the crockpot.
  • Cut chicken breasts into strips, add it to the crockpot on the top of the onion.
  • Add seasonings to the chicken breasts: onion powder, garlic powder, chili powder, ground cumin, sweet paprika, oregano, sea salt. 
  • Slice each bell pepper. If you add them to the crockpot in the beginning they will be mushy. If you would like them to be more crunchy add them 1 hour before ending the cooking.
  • Cook on high for 2 - 3 hours.
  • Slice avocado.
  • Stuff tortilla with chicken. Add avocado and cilantro.
