Baked Zucchini Fries with Garlic Dipping Sauce

Ingredients

Zucchini Fries

  • 2 cups panko breadcrumbs
  • 1/2 tsp. salt
  • 1/3 cup all-purpose flour
  • 2 eggs
  • 2 tsp. milk
  • 2 zucchini quartered, lengthwise

Garlic Dip

  • 1 cup plain greek yogurt
  • 1/4 tsp. salt
  • 4 Tbsp. green onion chopped
  • 2 garlic cloves minced

Instructions

Baked Zucchini Fries

  • Prepare baking sheet with parchment paper, coat with nonstick spray and preheat the oven to 400 F.
  • In a large bowl combine panko breadcrumbs and salt. Set aside.

  • In a large bowl add all-purpose flour.

  • In a medium bowl beat eggs with milk using fork. Set aside.

  • Dredge zucchini fries first into flour shaking the excess, dip in beaten eggs, then coat with panko breadcrumbs.

  • Place zucchini fries side by side on baking sheet.
  • Bake zucchini fries for about 20 minutes until they are crunchy and brownish.

Air Fryer Zucchini Fries

  • Set the Air Fryer on 350 F and time for 10 minutes until crispy. Place fries side by side in Air Fryer basket and spray with cooking oil. You might need to do it in batches if your basket is small. Try not to stack fries on each other.

Garlic Dip

  • In a medium bowl combine greek yogurt, salt, green onion and minced garlic, mix well.

Notes

  • It is ok to omit the flour in this recipe. However, I’ve noticed that dipping in flour first helps to coat fries nicely in beaten egg and panko breadcrumbs.
  • It is recommended to use some milk in beaten eggs. It helps to smooth the mixture evenly.
  • You have two options of baking these fries, in the oven or in Air Fryer. I use Secura Air Fryer and I recommend it. It does fry my food nicely.
  • To make zucchini fries in the Air Fryer, start by cutting the zucchini into sticks, just like you would with regular fries. Make sure they are all roughly the same size to ensure even cooking. Once you have your zucchini sticks ready, simply arrange them in a single layer in the Air Fryer basket. However, be careful not to overcrowd the basket. It’s best to put the fries side by side, without stacking them on top of each other. If you have a smaller Air Fryer, you may need to cook them in batches.
