Mexican Salad with Avocado Dressing

Salad
- 1 cup black beans
- 1 cup tomato diced
- 1 cup corn
- 1/4 cup cilantro chopped
Dressing
- 1 avocado
- 1 tsp. fresh lemon juice
- 1/4 cup extra virgin oil
- 1/2 cup greek yogurt
- 4 Tbsp. buttermilk
- 1 garlic clove squeezed
- 2 tsp. hot sauce
- salt/pepper
Dressing
In another bowl mash avocado, add lemon juice, oil, greek yogurt, buttermilk, garlic clove and hot sauce. It is the best to blend all ingredients in a blender. Season with salt and pepper.
