Basil and Cheddar Potato Stacks
Servings: 10 - 12 potato stacks
- 5 - 6 medium-sized potatoes washed
- 2 Tbsp. butter melted
- 2 Tbsp. grapeseed oil
- 2 Tbsp. dried basil
- 1/8 tsp. pepper
- 1/8 tsp. salt
- 1/8 tsp. onion powder
- 1/2 cup cheddar cheese grated
Preheat oven to 375 F. Prepare muffin tin and spray with nonstick oil.
Slice potatoes very thinly.
In a large bowl mix butter, grapeseed oil, dried basil, salt, pepper and onion powder.
Add cheddar cheese and mix.
Add sliced potatoes and mix all ingredients very well.
Stack potatoes in each muffin tin.
Bake for 35 - 45 minutes until potatoes are soft and baked thoroughly.
