Peanut Butter Coconut Energy Balls

Ingredients

  • 1 cup oats
  • ¼ cup cashews
  • 1 cup dates
  • 2 Tbsp. vanilla soy milk
  • 1/2 cup peanut butter
  • 1 Tbsp. chia seeds
  • ¼ cup unsweetened coconut flakes

Instructions

  • In the food processor pulse oats with cashews for few seconds.
  • Soak dates for 5 minutes in warm water to soften them.
  • Blend dates in the food processor with soy milk for couple seconds.
  • In a medium bowl combine oats, cashews, dates paste, peanut butter, chia seeds and coconut flakes. Use your hands to make one huge ball and all ingredients will combine well.
  • Make 12 small balls.
