- 8 eggs hard-boiled
- 1/2 cup mayonaisse
- 1/4 cup cilantro chopped
- 1 jalapeno diced
- 1/8 tsp. black pepper
Cut eggs in half and remove yolks.
In a medium bowl put egg yolks, mayonnaise, cilantro, jalapeno and pepper. Mix all ingredients together.
Stuff each egg with the filling using small spoon.
- You don't really have to add extra salt if your mayonnaise is salty enough. Try the stuffing first, then adjust salt.
- Cut hard-boiled eggs in half, scoop egg yolks with small spoon.
- Add 1 teaspoon of mustard for extra flavor if you wish. However, I didn't use mustard in this recipe.
- You can use any other bell pepper if you would like milder version of this appetizer.
