Ingredients

  • 1 Tbsp. vegetable oil
  • 1 onion diced
  • 4 Italian sausages spicy, medium or mild
  • 2 garlic cloves pressed or chopped
  • 3 white potatoes peeled, diced
  • 8 cups stock or water
  • 1 tsp. salt
  • 2 cups kale chopped
  • 19 oz. cannellini beans 540 ml
  • 1/2 cup heavy whipping cream
  • 1/3 cup parmesan cheese

Instructions

  • Heat 1 tablespoon of vegetable oil in a large pot.

  • Add onion to the pot, cook for about 3 minutes until slightly brown.

  • Add sausages to the pot, cook over medium-high heat until fully cooked for approximately 5 minutes, add garlic and cook additional 2 minutes.

  • Add diced potatoes. Add chicken broth and salt. Bring mixture to boil then reduce heat to low-medium heat. Cook for approximately 25 minutes, slighly covered.
    3 white potatoes, 8 cups stock, 1 tsp. salt
  • Add kale and beans, cook for 5 minutes.
    2 cups kale, 19 oz. cannellini beans
  • Remove from heat, add whipping cream.
    1/2 cup heavy whipping cream
  • Garnish with parmesan cheese for serving.
