Peanut Butter Coconut Energy Balls

Servings: 12 energy balls
- 1 cup oats
- ¼ cup cashews
- 1 cup dates
- 2 Tbsp. vanilla soy milk
- 1/2 cup peanut butter
- 1 Tbsp. chia seeds
- ¼ cup unsweetened coconut flakes
In the food processor pulse oats with cashews for few seconds.
Soak dates for 5 minutes in warm water to soften them.
Blend dates in the food processor with soy milk for couple seconds.
In a medium bowl combine oats, cashews, dates paste, peanut butter, chia seeds and coconut flakes. Use your hands to make one huge ball and all ingredients will combine well.
Make 12 small balls.
