Preheat the oven to 350°F and prepare a baking sheet with parchment paper.
In a large bowl, combine all-purpose flour, baking soda, and salt. Set aside.

In another large bowl, beat together butter, brown sugar, and granulated sugar.

Add vanilla extract, apple cider vinegar, and egg to the sugar-butter mixture. Mix well.

Gradually add the flour mixture to the wet ingredients. Mix until well combined.
Use an ice cream scoop to form batter into balls and place them on the prepared baking sheet.
Bake for 8-10 minutes at 350°F.
Remove the cookies from the oven, especially if they appear under-baked, to prevent them from becoming too dry.
