- 1 beet small, peeled
- 1 1/2 cup water
- 1 cup strawberries
- 1/4 cup blueberries
- 1 banana small (optional)
Cut beet into cubes. Fill pot with water, add beet.
1 beet, 1 1/2 cup water
Cook until soft, about 20-30 minutes. Cool off completely. Keep remaining water.
In the blender add cooked beet with remaining water, strawberries, blueberries and banana. Blend until smooth. 1 cup strawberries, 1/4 cup blueberries, 1 banana
- It is not necessary to cook the beet, however I found it easier to blend. The beet is softer.
- Don't drain the water from cooked beet. Use it in the smoothie! It contains flavor and nutrients.
- Add more water if the beetroot smoothie will become thick.
- I used my favorite Ninja Blender for this smoothie. It blends fruits and vegetables smoothly. I use my blender daily for smoothies.
- SUBSTITUTIONS: Instead of blueberries or strawberries, raspberries can be used in this smoothie. The banana is optional.
