Fish Cod with Tomatoes
I usually fry fish, but I wanted to prepare a cod in a different way. This fish is thick so it is perfect for this recipe. It goes really well with tomatoes, onions and herbs. It can be served with potatoes or rice. It depends what you will prefer:)
Ingredients:
For 3 servings:
3 pieces of cod
2 medium sized onions
2 Tablespoons butter
1 can (14.5 oz) diced tomatoes
salt/pepper
1 Teaspoon oregano
4 Tablespoons water
Instructions:
Peel and slice onions:
Prepare a frying pan and melt butter in it. Add sliced onions, on medium heat cook onions for 10 minutes, mix sometimes. Cook onions until soft. Add tomatoes and cook on high heat for 2 – 3 minutes. Wash and season the fish. Add it on top of the onions and tomatoes. Add oregano. Cook on low heat for 25 – 30 minutes. After 10 minutes of cooking add 4 Tablespoons of water.
