Pork with Mushrooms & Carrots

This pork recipe is perfect for everyday dinner and easy to make. It can be served with potatoes, rice, couscous, pasta etc.
Ingredients:
For 3 servings:
Pork chops (3 pieces, thick)
4 large mushrooms
2 carrots
oil
seasoning (salt/pepper or any other: I used Mrs Dash seasoning)
Instructions:
Season pork chops on both sides. Heat oil in a frying pan. Put pork chops and cook on high heat for 10 minutes on both sides. Take out meat. Leave the juice on frying pan. Slice mushrooms and carrots; add it to the frying pan. Cook on high heat for 7 – 8 minutes. After this time add meat on top of the mushrooms and carrots. Simmer on low heat, covered for 15 – 20 minutes. The meat will be juicy.

Mmmmm….I’m not a fan of mushrooms, but hubby is. I’ll have to try this, with extra carrots for the rest of the family. =0)
It came up really good, very juicy and not dry at all. You can substitute mushrooms for other vegetable.
