One of my best healthy honey mustard chicken recipe made so easily and most importantly quickly. Sometimes I’m in a mood of frying chicken–> yes the chicken breast dipped with beaten egg, bread crumbs and fried in lots of oil. Yum, that’s good but I had to say stop to this caloric dish.
I’ve thought what else can I do.. once I made Easy Barbecue Chicken and it was delicious. I thought how about honey-mustard combination and that’s how my new homemade dish came out. I used Dijon mustard and honey. I was thinking why I’ve never made this before. But now I’m going to change it and still have couple of more ideas of healthy chicken dishes.
For my sweet and tangy honey mustard chicken recipe I’ve used some chive. I’m a “chive” person; I add them whenever I can. Also, I sprinkled my chicken with fresh cilantro that I had in my home. I bought the cilantro for Mexican recipe –> coming soon <– but I like to add it for my other dishes as well.
I skipped potatoes… rice or pasta for this dinner and made it with baked zucchini. I love baked zucchini. Have you tried it before? It’s so simple and so good. I baked my sliced and salted zucchini in the oven for about 30 minutes.

Honey Mustard Chicken Recipe
- 1 small chicken breast
- 1 Tbsp. Dijon mustard
- 1/2 Tbsp. honey
- 1 Tbsp. chopped chive
- 1 tsp. butter
- salt/pepper to taste (optional)
- 1/2 cup sliced zucchini
- In a small bowl mix mustard with honey. Dice the chicken breast and mix with marinate.
- Leave it for 2 hours.
- Melt the butter on the frying pan, add chicken and cook uncovered on medium heat for 15 - 20 minutes. At the end of cooking add chive. Add salt and pepper if you prefer
- Preheat oven to 350 F. Prepare the pan with parchment paper. Lay zucchini and sprinkle with salt. Bake for 20 - 30 minutes.
