If you’ve never made any Mexican parties it’s time to change it! This chicken taco soup is the best idea that you can make for family and friends gatherings. Easily made in crockpot and served with few Mexican inspired toppings, mainly cilantro and sour cream. Anyway, this soup is not only for parties it is great for weeknight dinner as well.

Crockpot Chicken Taco Soup Recipe

Texture: liquid consistency with corn, chicken and beans.
Taste: lots of Mexican flavors like cumin, chili, and cilantro. A little spicy.
Simplicity: very easy, just put all ingredients in a slow cooker and cook it.
Meal Type: luncheon, soup parties, soup.

How to make Taco Soup

  1. Firstly, gather all ingredients: oil, chicken breast, salsa, corn, taco seasoning, onion powder, cumin, garlic powder, salt, diced beefsteak tomato and red kidney beans.
  2. Put all ingredients in the slow cooker except red kidney beans.
  3. Cook it for 3 hours on high.
  4. Remove the chicken, shred it with a fork or cut into cubes. Place back in the crockpot, add red kidney beans, cook it for additional hour.

  • Fresh chopped cilantro.
  • Diced avocado.
  • Crushed tortilla chips.

  • You can make the soup few days before, store it in the refrigerator. On the day of the party prepare all the toppings: cilantro, shredded cheese, tortilla chips etc.
  • Can I make Crockpot Taco Soup for everyday cooking? Yes, the soup is great for weeknight meal, it doesn’t have to be made specifically for a party. You can simply enjoy Mexican flavored soup any day.
  • If you don’t own slow cooker you can make it in a large pot on the stove. The cooking time will be cut significantly. Cook the soup covered on low-medium heat.

How long is taco soup good for? It is good for few days (up to 4-5 days), store it in a glass or plastic container covered in refrigerator. You can also easily freeze the soup, store it in the freezer for 3 months.

How do you defrost taco soup? The best way is to defrost overnight in the refrigerator. Alternatively, if you need to defrost quicker you can place frozen soup in a large pot, simmer on low heat, mixing often.

Can I add black beans instead of red kidney beans? Yes, black beans will taste perfectly.

What to serve with slow cooker taco soup? You can add some white or brown rice, variety of toppings like: shredded cheese, fresh cilantro, hot sauce, any bell peppers.

Ingredients

Taco Soup

  • 1 Tbsp. oil
  • 1 chicken breast large
  • 15.5 oz. salsa 1 jar (mild or medium)
  • 1 cup corn frozen
  • 2 Tbsp taco seasoning
  • 1 tsp. salt
  • 1/2 tsp. onion powder
  • 1/4 tsp. garlic powder
  • 1/8 tsp. ground cumin
  • 4 cups water
  • 1 tomato beefsteak
  • 19 oz. red kidney beans 1 can

Toppings

  • 1/2 cup sour cream
  • 1 cup cheese shredded
  • 1 jalapeno sliced
  • 2 cups tortilla chips
  • 1/2 cup cilantro chopped

Instructions

  • Turn on the slow cooker on high, add oil.
  • Add chicken breast, salsa, corn, taco seasoning, salt, onion powder, garlic powder, cumin and 4 cups water.
  • Optional: remove the skin from beefsteak tomatoes. To remove the skin. Boil about 3-4 cups water in the kettle and pour on tomato. Remove the skin.
  • Dice tomato, add it to the slow cooker. Cook on high for 3 hours.
  • After 3 hours remove the chicken breast and shred with fork or cut with knife into smaller pieces. Add it back to the slow cooker. Add kidney beans. Cook for additional 1 hour on high.
