Barbacoa
- 6 lb. beef roast
- 1 1/2 cup chicken broth
- 1/2 cup lime juice
- 2 Tbsp. vegetable oil
- 3 Tbsp cumin ground
- 2 Tbsp. oregano
- 2 tsp. salt
- 1 1/2 tsp. sweet paprika
- 7 garlic cloves pressed or shredded
- 5 chipotles in adobo cut into small pieces
- 2 onions sliced
- 2 bay leaves
Lime Cilantro Rice
- 3 1/4 cups water
- 1 1/5 cup long-grain rice
- 1 tsp. butter
- 1/2 tsp. salt
- 1/2 Tbsp. lemon juice
- 3 limes
- 1/2 cup cilantro chopped
Corn
- 2 cups corn frozen and cooked
- 1/4 cup red onion chopped
- 1/4 cup cilantro chopped
- 1/4 tsp. salt
Salsa
- 7 tomatoes medium-sized, diced
- 1 red onion small, chopped
- 1/2 cup cilantro chopped
- 1 tsp. salt
- 1/8 tsp. black pepper
Avocado Dip
- 3 avocados
- 2 tomatoes medium-sized, diced
- 1/4 cup cilantro chopped
- 1/4 cup green onion chopped
- 1/2 tsp. salt
- 1/8 tsp. black pepper
Extras
- 56 oz. kidney beans 2 cans (28 oz. each), warmed up
- 2 cups cheese shredded
- 1 cup sour cream
- 5 cups lettuce chopped
- 5 cups tortilla chips
- 8 cups vanilla ice cream
Instructions
Barbacoa
- Cut the beef into 1-inch cubes and place them in the slow cooker.6 lb. beef roast
- Add chicken broth, lime juice, and oil.1 1/2 cup chicken broth, 1/2 cup lime juice, 2 Tbsp. vegetable oil
- Add spices: cumin, oregano salt and sweet paprika.3 Tbsp cumin, 2 Tbsp. oregano, 2 tsp. salt, 1 1/2 tsp. sweet paprika
- Add garlic, chipotles in adobo sauce, onions, and bay leaves.7 garlic cloves, 5 chipotles in adobo, 2 onions, 2 bay leaves
- Cook on low for 8 hours or high for 4 hours. Once cooked, remove the meat from the slow cooker and cut into smaller pieces with a knife, or shred it using a fork.
- Return the meat to the slow cooker and continue cooking on low for 3 hours or high for 1.5 hours.
- When the meat is tender and flavorful, turn off the slow cooker. Taste and add more salt if needed.
Lime Cilantro Rice
- In a medium saucepan, combine water, rice and butter.3 1/4 cups water, 1 1/5 cup long-grain rice, 1 tsp. butter
- Add salt, lemon juice, and the juice of 1 lime. Bring to a boil, then reduce the heat and simmer on low-medium for 20 minutes.1/2 tsp. salt, 1/2 Tbsp. lemon juice
- Once the rice is cooked, add the juice from the remaining limes and the chopped cilantro. Mix well and serve.3 limes, 1/2 cup cilantro
Corn
- In a large bowl, combine corn, red onion, and cilantro. Season with salt and pepper and mix well.2 cups corn, 1/4 cup red onion, 1/4 cup cilantro, 1/4 tsp. salt
Salsa
- In a large bowl, combine tomatoes, red onion, and cilantro. Season with salt and pepper, and mix well.7 tomatoes, 1 red onion, 1/2 cup cilantro, 1 tsp. salt, 1/8 tsp. black pepper
Avocado Dip
- In a large bowl, mash the avocados with a fork. Add tomatoes, cilantro, and green onion.3 avocados, 2 tomatoes, 1/4 cup cilantro, 1/4 cup green onion
- Season with salt and pepper. Mix everything together until well combined.1/2 tsp. salt, 1/8 tsp. black pepper
Mexican Bowl
- Layer the ingredients in a tortilla bowl starting with the rice on the bottom, followed by the meat, beans, corn, salsa, avocado dip.56 oz. kidney beans, 24 flour tortilla
- Add toppings: cheese, sour cream, and lettuce.2 cups cheese, 1 cup sour cream, 5 cups lettuce
- Serve with chips on the side.5 cups tortilla chips
