Mexican Salad with Avocado Dressing
Mexican Salad with beans, corn and cilantro topped with avocado dressing.
It’s my own version of Mexican salad. Maybe I should name it with a different name… but Mexican salad was the best that came to my mind. I wasn’t born in Mexico nor I know something about this cuisine. I was just introduced to Mexican food when I was living in USA and I totally loved it.
Anything Mexican was my favorite. Just the perfect amount of spiciness and lots of cilantro. This is how I like it. I remember when I couldn’t stop eating the jalapeno. They were all the time at my home. And the best I loved it with avocado dip.
This salad is just my own salad that I recently made. It is mainly made with beans, corn, tomato and chopped cilantro. Just few simple ingredients. It is topped with homemade avocado dressing. I was just trying to get the perfect consistency of avocado dressing by adding the buttermilk. It came out very good and not so thick.
It was my first attempt making avocado dressing. I didn’t know what to expect. But the combination of all these Vegetables + Avocado dressing was so good. This Mexican salad is perfect for lunch or as a side dish on dinner plate.

Mexican Salad with Avocado Dressing
Ingredients
Salad
- 1 cup black beans
- 1 cup tomato diced
- 1 cup corn
- 1/4 cup cilantro chopped
Dressing
- 1 avocado
- 1 tsp. fresh lemon juice
- 1/4 cup extra virgin oil
- 1/2 cup greek yogurt
- 4 Tbsp. buttermilk
- 1 garlic clove squeezed
- 2 tsp. hot sauce
- salt/pepper
Instructions
Salad
- In a large bowl mix black beans, diced tomato, corn and cilantro.
Dressing
- In another bowl mash avocado, add lemon juice, oil, greek yogurt, buttermilk, garlic clove and hot sauce. It is the best to blend all ingredients in a blender. Season with salt and pepper.
