Churro Cupcakes
Easy to make churro cupcakes recipe made with lots of cinnamon and mascarpone frosting. Great for fiesta or any other type of party!
I meant to bake churro cupcakes someday. Let me tell you a little about them. If you are a huge fun of churros you’ll definitely like these cupcakes. However, I know churros are fried so the texture obviously is different in these cupcakes. They are made with lots of cinnamon. They are moist which I like. The one thing is that they are not over sweet, they are just sweet enough. But if you will think its is not enough sugar, just add it more. You can always taste the batter when you are making them.
I just think that many of American and Canadian desserts are too sweet. I will take only a bite and I won’t even finish the whole piece of dessert because it is too sweet for me. Obviously we don’t need so much sugar in our lives. You want to enjoy dessert and not only taste overpowering sugar.
Anyway, these churro cupcakes are so easy to make. Firs tof all, you will combine flour, [easyazon_link identifier=”B00ZK8YIXW” locale=”US” tag=”ilospas-20″]cinnamon[/easyazon_link], baking powdered and baking soda. Then you will work on butter, sugar, eggs, greek yogurt, milk and [easyazon_link identifier=”B0002UN7PI” locale=”US” tag=”ilospas-20″]vanilla extract[/easyazon_link].
The frosting is so fluffy, flavorful and yummy. It is made with whipping cream and delicious mascarpone cheese.

Ingredients
Churro Cupcakes
- 1 1/4 cups all-purpose flour
- 1 1/2 tsp. baking powder
- 1/4 tsp. baking soda
- 1 Tbsp. cinnamon
- 2 eggs
- 3/4 cup cane sugar
- 1/2 cup unsalted butter
- 1/2 tsp. vanilla extract
- 1/4 cup milk
- 3/4 cup greek yogurt
Frosting
- 1 cup whipping cream
- 6 Tbsp. mascarpone cheese
- 1 tsp. cinnamon
- 3 Tbsp. powdered sugar
Instructions
- Preheat oven to 350 F and prepare muffin tin with 12 cupcake liners. In a medium bowl combine flour, baking powder, baking soda and cinnamon. Set aside.In a large bowl, using an electric mixer beat eggs with sugar for about 3-5 minutes until smooth. To the mixture add butter, vanilla extract and mix for 3 minutes. Add, milk and greek yogurt. Mix everything very well with electric mixer. Add dry ingredients to the wet and mix until well combined. Fill each cupcake liner full with 3/4 batter. Bake for 15 - 20 minutes or until the toothpick inserted will come out clean. Remove from oven.Before frosting cool cupcakes completely on a wire rack.In a large bowl combine ingredients for frosting: whipping cream, mascarpone cheese, cinnamon and powdered sugar. Beat with electric mixer until soft peak.Frost each cupcake.
