Baked Carrot Fries with Greek Yogurt Dip

MostlyBaked carrot fries are seasoned with garlic and served with lemon greek yogurt dip. They are great as a side dish, snack or new french fries for a party!

I can guess many of you have New Year’s resolution. Sometimes it is to exercise more, eat healthy or just eat wholesome products. For me personally I introduced more grains like buckwheat, barley and couscous. Moreover, I limited cold cuts and sweets and I focus to eat more fruits and vegetables. I try to eat healthier version of sweets like my Peanut Butter Coconut Energy Balls.

I like baked carrots and these were the most simple and healthy french fries that you can make at home. First of all, I used only few ingredients and they still came out incredible. I basically ate all of them by myself. Secondly, I promise once you’ll make them you won’t stop eating them.

First I cut my carrot fries in half and then I cut them lengthwise to make strips of fries. I added some oil, seasoned with [easyazon_link identifier=”B000WR8TT0″ locale=”US” tag=”ilospas-20″]garlic powder[/easyazon_link] that I use basically all the time in my kitchen. Mostly, I add it to my meat like chicken or pork, dips/sauces and vegetables.

I also seasoned my carrot fries with salt and pepper. Placed nicely on the baking sheet and I just baked them. To prepare lemon dip you can just mix greek yogurt with freshly squeezed lemon juice, salt and pepper. Lately I am using mostly greek yogurt instead of sour cream for all my cooking.

Healthy and party friendly baked carrot fries with lemon garlic dip. Very easy to make with few ingredients.

Ingredients

  • Carrot Fries:4 large carrots2 Tbsp. sunflower oil1/2 tsp. garlic powderSalt and pepper to tasteGreek Yogurt Dip:1/2 cup greek yogurt1 tsp. freshly squeezed lemon juiceSalt and pepper to taste

Instructions

  • Preheat oven to 425 F. Prepare [easyazon_link identifier="B00008W70E" locale="US" tag="ilospas-20"]baking sheet[/easyazon_link] with parchment paper or [easyazon_link identifier="B007KN6GDU" locale="US" tag="ilospas-20"]cookina[/easyazon_link]. Peel carrots, cut each carrot in half, then cut in half lenghtwise. Cut lengthwise to make fries.In a large bowl place carrots, add oil, [easyazon_link identifier="B000WR8TT0" locale="US" tag="ilospas-20"]garlic powder[/easyazon_link], salt and pepper. Mix all together. Spread on baking sheet. Bake for 30 - 35 minutes.In a small bowl mix greek yogurt with lemon, salt and pepper. Add salt and pepper how much you prefer. Serve with carrot fries.
