Crunchy no mayo easy broccoli salad with shredded carrots, green onion, lots of sliced almonds and homemade dressing. Vegetarian and healthy raw broccoli salad is great for lunch.

Imagine making healthy and cold side dish with raw veggies and few simple dressing ingredients in 20 minutes. Delicious and mouthwatering salad with sour/sweet flavors great for lunch, brunch or as a side dish for dinner.

No Mayo Easy Broccoli Salad Recipe

Simplicity: easy to make, chop veggies, make no mayo dressing.

How to make Broccoli Salad

  1. (Check printable recipe below). Get all ingredients: broccoli, carrot, green onion, almonds, olive oil, red wine vinegar, garlic powder, greek yogurt, salt, honey mustard and honey.
  2. Chop broccoli and green onion, shred carrot, combine them in a large bowl.
  3. Make dressing by mixing olive oil, red wine vinegar, garlic powder, greek yogurt, salt, honey mustard and honey.
  4. Mix the dressing with raw veggies.
  5. On the frying pan toast sliced almonds, add it on the top of the salad or mix in.

Cold Broccoli Salad Tips

  • Cut broccoli into small pieces before mixing with other ingredients.
  • Add more honey if the dressing is to sour for you or you prefer sweeter dish.
  • You can mix in sliced toasted almonds together with salad or just sprinkle over the top.
  • Also, you can add more salt if you prefer more salty dish.

What does broccoli salad go with? Healthy raw broccoli salad can be a great side dish for your Oven Baked Chicken Thighs or Oven Baked Basa Fish Fillets. It will go well with potatoes, rice, quinoa, and any type of meat.

How long is broccoli salad good in fridge? It can last 3-5 days in closed container in the fridge. Also, keep in mind the expiration day of greek yogurt, since it is dairy.

Do you steam broccoli? No, you don’t have to steam the broccoli florets to make this side dish, however if would like a softer veggie, you can steam it for few minutes. Otherwise, we eat raw broccoli.

Ingredients

  • 3 cups broccoli chopped
  • 1/2 cup carrot shredded
  • 1/2 cup green onion chopped
  • 1/2 cup almonds sliced, toasted
  • 1/4 cup olive oil
  • 5 Tbsp. greek yogurt
  • 2 Tbsp. red wine vinegar
  • 4 tsp. honey mustard
  • 1 tsp. honey
  • 1/4 tsp. garlic powder
  • 1/4 tsp. salt

Instructions

  • In a large bowl combine broccoli, carrot, green onion and almonds. Set aside.
  • In a small bowl make dressing with olive oil, greek yogurt, red wine vinegar, honey mustard, honey, garlic powder and salt, mix well.
  • Add dressing to veggies, mix well.
