I’ve got one more quick last minute gift idea. These pistachio cranberry cookies are so easy to make. It just requires an empty jar and a few ingredients. I also included this beautiful “Happy Holidays” free printable to download at the end of the post. However, the best part is that I also included printable instructions as a tag, so you can simply attach to the jar.

I think everyone will be happy to receive this as a gift. By adding whole wheat flour I made it more healthy. To make my cookies delicious I added lots of delicious cranberries and pistachios. I love baking with pistachios, they are so crunchy.

I will explain everything how the ingredients can be assembled in the jar. Therefore, I always reuse the jar, so if you have any on hand you can use it. Simply mix 1/2 cup whole wheat flour with 1/4 tsp. baking soda. Put on the bottom of the jar. Add 1/3 cup brown sugar, then 3/4 cup rolled oats and 1/4 cup quick oats. Then add 1/2 cup cranberries and 1/2 cup pistachios. I will also include the full recipe and instructions on the bottom of the post.

To bake these pistachio cranberry cookies only 3 ingredients will be needed: 1 egg, 4 Tbsp. Oil and 1 tsp. vanilla extract. Everything is clearly written on the tag attached to the jar (the ingredients needed and instructions for baking).  Also, you will need a string, hole puncher to attach the tag and tape to adhere free printable”Happy Holidays” label.

Ingredients

Dry Ingredients {For the Jar}

  • 1/2 cup whole wheat flour
  • 1/4 tsp. baking soda
  • 1/3 cup brown sugar
  • 3/4 cup rolled oats
  • 1/4 cup quick oats
  • 1/2 cup cranberries
  • 1/2 cup pistachios

Wet Ingredients {To Bake}

  • 1 egg
  • 4 Tbsp. oil I used melted coconut oil
  • 1 tsp. vanilla extract

Instructions

To Assembly the Jar

  • Mix flour with baking soda. Put on the bottom of the jar. Then put sugar, rolled oats, quick oats, cranberries and pistachios.

To bake cookies

  • Preheat oven to 350 F.
  • Prepare baking pan with parchment paper. Mix wet ingredient together until well combined. Add dry ingredients from the jar. Mix by spoon.
  • Form small balls and lay on the baking pan.
  • Bake 12 - 15 minutes.
