Moist and delicate mango muffins made with quinoa and banana.

Before I even start talking about these moist, sweet and the BEST mango muffins I would like to introduce you to Yummly. The site where you can collect recipes you like. Yummly allows you to find recipes by holiday, taste, technique etc. According to your taste preferences; yummly recommends the best recipes for you. The best part about Yummly is that you can organize your recipes into categories: appetizers, dinner, lunch, breakfast, my favorite recipes or however you prefer. Set up your profile with your preferences. Exclude allergies like dairy, peanut, seafood or gluten. Choose which diet you follow like vegan, vegetarian etc. And yummly will find recipes that will perfectly suit your diet.  If you would like to cook with ingredients that you have in your fridge you can simply type what you have and yummly will find perfect recipes for you. You can also connect you profile with Facebook and share recipes with your friends.

Yummly also offers apps for iPhone, IPad and Android for shopping on the go. Therefore, whenever you are shopping and you would like to look up the recommended recipe by yummly you can easily check it in your app.

What I like the most about the Yummly is that I can easily just click on Yum button in my bookmark and I can save all my recipes from my blog to my Yummly Collection.

Right after I publish my Banana Quinoa Mango Muffins I will definitely save this recipe in my yummly collection. And you can do this too. If you would like to save my mango muffins and make them at later time just create your profile on yummly and save the recipe. So simple and easy:)

I brought these muffins to my friend’s house and after 10 minutes they were gone. They loved them so much. Even children were excited about them. They are sweet with banana flavor and with addition of mango. I’ve added quinoa and I can honestly tell you that I love baking with quinoa. Period. I will always come back to this recipe.

Banana Quinoa Mango Muffins

Ingredients

  • 3/4 cup whole wheat flour
  • 3/4 cup all-purpose flour
  • 1 cup cooked quinoa
  • 3 1/2 tsp. baking powder
  • 1/8 tsp. baking soda
  • 1/4 cup cane sugar
  • 2 eggs
  • 1/4 cup coconut oil melted
  • 1/2 cup greek yogurt
  • 1 tsp. vanilla extract
  • 1/2 cup mashed banana
  • 1/2 cup diced mango

Instructions

  • Preheat oven to 425 F. Prepare muffin tin with 12 liners.
  • In a large bowl mix flours, cooked quinoa, baking powder, baking soda and cane sugar
  • In a separate bowl whisk the egg. Add coconut oil, greek yogurt, vanilla extract and mashed banana.
  • Pour wet into the dry ingredients and mix until well combined.
  • Add diced mango and gently fold in.
  • Pour into muffin tins.
  • Bake for 5 minutes, then reduce the temperature to 350 F and bake another 20 - 25 minutes.
