I brought these muffins to my friend’s house and after 10 minutes they were gone. They loved them so much. Even children were excited about them. They are sweet with banana flavor and with addition of mango. I’ve added quinoa and I can honestly tell you that I love baking with quinoa. Period. I will always come back to this recipe.
Banana Quinoa Mango Muffins
- 3/4 cup whole wheat flour
- 3/4 cup all-purpose flour
- 1 cup cooked quinoa
- 3 1/2 tsp. baking powder
- 1/8 tsp. baking soda
- 1/4 cup cane sugar
- 2 eggs
- 1/4 cup coconut oil melted
- 1/2 cup greek yogurt
- 1 tsp. vanilla extract
- 1/2 cup mashed banana
- 1/2 cup diced mango
- Preheat oven to 425 F. Prepare muffin tin with 12 liners.
- In a large bowl mix flours, cooked quinoa, baking powder, baking soda and cane sugar
- In a separate bowl whisk the egg. Add coconut oil, greek yogurt, vanilla extract and mashed banana.
- Pour wet into the dry ingredients and mix until well combined.
- Add diced mango and gently fold in.
- Pour into muffin tins.
- Bake for 5 minutes, then reduce the temperature to 350 F and bake another 20 - 25 minutes.
