Apple Peanut Butter Oatmeal Cookies
Peanut butter oatmeal cookies made without refined sugar and unhealthy oil.
Since my children attend school I’m forgetting about peanut butter because there is school peanut free policy. That’s why I make less peanut butter treats. We like peanut butter and my older son loves it too. He likes the most with crepes and banana. Sometimes I want to make something that my children easily can take to school.
However, recently I thought that peanut butter oatmeal cookies must be so good. I decided to make them. It was quick decision, trial-and-error .. but in the end they came out so delicious. Full of peanut butter flavor, apple and cinnamon. I don’t really make a lot of peanut butter cookies or other treats. I thought it will be nice to do something different than….. chocolate. I can’t live without chocolate that’s why I’ve got plenty chocolaty recipes.
Browsing Pinterest I found many recipes for energy bites. However, I noticed they are not baked. I prefer baked oats. That’s why I created energy cookies instead of no bake energy bites. I’ve got many oats recipes, for example oat Flour Almond Plum Cookies that I just really like. They are so tasty with plum and almond flavor.
However, my peanut butter oatmeal cookies have a strong peanut butter flavor and you can taste it in every bite. Totally delicious.

Apple Peanut Butter Oatmeal Cookies
Ingredients
- 2 cups rolled oats
- 1/4 cup whole wheat flour
- 1 tsp. cinnamon
- 1/2 cup peanut butter
- 1/2 cup coconut oil melted
- 1/3 cup maple syrup
- 1 small apple shredded
- 1/4 cup golden rasins
Instructions
- Preheat oven to 350 F, prepare baking pan with parchment paper.
- In a medium bowl mix rolled oats with cinnamon and flour.
- In another bowl mix peanut butter, coconut oil, maple syrup, shredded apple and golden raisins.
- Mix wet ingredients with dry ingredients together.
- Form balls and place on the baking sheet.
- Bake for 15 minutes.
