I am so happy to introduce new cupcakes for you today. Let me tell you something I didn’t actually plan to make brownie cupcakes they just happened by accident. I was working on the chocolate cupcakes and I had everything planned how they will look and what frosting will I choose. During my process of preparing everything from scratch I’ve decide to give brownie cupcakes a chance. I love brownies and I can eat them all the time. Same for my children so I was happy that these cupcakes were very successful.
I’ve got so many cupcake recipes already on the blog and you can simply choose something for your party. I like to make cupcakes without any occasion too. Brownie Cupcakes with Chocolate Frosting
Ingredients
- Cupcakes:1 cup all-purpose flour1/3 cup cacao powder1/2 tsp. baking powder3/4 cup unsalted butter softened1 cup cane sugar2 eggs1 tsp. vanilla extract1/2 cup greek yogurtFrosting:8 oz. (1 brick) cream cheese, softened3/4 cup semi-sweet chocolate chips3 - 4 Tbsp. powdered sugar*
Instructions
- Preheat oven to 350 F. Prepare muffin pan with liners.In a medium bowl combine flour, [easyazon_link identifier="B00EKLPLU4" locale="US" tag="ilospas-20"]cacao powder[/easyazon_link] and baking powder. Set aside.In a separate bowl beat butter with sugar using [easyazon_link identifier="B000FIOU76" locale="US" tag="ilospas-20"]electric mixer[/easyazon_link] until soft and fluffy. Add eggs, each at a time and beat the batter until all ingredients will incorporate well. Add [easyazon_link identifier="B0002UN7PI" locale="US" tag="ilospas-20"]vanilla extract[/easyazon_link] and greek yogurt. Mix well.Add dry ingredients and combine well.Pour the batter into the liners about 3/4 high. Bake for about 15 - 20 minutes. Remove from oven and cool off.In a medium bowl prepare frosting by combining cream cheese, melted [easyazon_link identifier="B00HCNCQ2S" locale="US" tag="ilospas-20"]chocolate chips[/easyazon_link] and powdered sugar. To melt chocolate chips use double boiler method: fill lower pan with water, bring water to simmer, put chocolate chips in top pan and stir. The microwave can be also used. Mix all ingredients well with electric mixer.Frost each cupcake with chocolate cream cheese frosting.
