Healthy Raspberry Chocolate Mousse
Healthy and no refined sugar chocolate mousse that you can eat without any guilt.
Let me tell you how this recipe started…. There goes the story… I was browsing my favorite Pinterest feed that I love and I can’t live without. And suddenly I found some interesting recipe for chocolate truffles. I decided to give it a try.
First of all the recipe seemed totally healthy without any refined sugar. The truffles looked so delicious without only couple ingredients. I knew I have to make them. So I went to my kitchen and I started to work on them. Ok, so quickly I realized that truffles will not come out of it. The batter was so watery. I hate throwing away food and I had to do something with my watery… healthy… chocolate mousse.
I decided that maybe I can do something similar to my Healthy Greek Yogurt & Fruit Dessert. I baked the oat flour bottom layer, same like for my Healthy Pomegranate Yogurt Pie. I thought that I should spread the mousse on the cooled of bottom layer made with oat flour. However, it wasn’t a success… the chocolate mousse was to watery for that pie.
Hmmm… I realized that I can eat simple as chocolate mousse and I can top it with raspberries. They go perfectly with the chocolate. Definitely my favorite. I added some other ingredients and my new own recipe was born. Finally it was the best healthy chocolate mousse that is so delicious. I ate all of it right away. I couldn’t stop it.
It’s is sweetened with honey. But maple syrup can be substitutions as well. Next time I’ll try it with maple syrup. Also, I used natural Truwhip that can be found in organic stores.
