Oat and Raisin Cookies {Gluten Free}

Gluten free oat and raisin cookies made with coconut oil and maple syrup.

After baking with many flours I came to conclusion that oat flour and spelt flour are my favorite. After all-purpose flour and whole-wheat flour of course! For a couple of months I tried many flours and I know that oat and spelt are easy to work with.

Probably you’ve noticed how many types of flour you can find in the store. I still have brown rice flour and buckwheat flour in my pantry that I didn’t use it yet. I baked with coconut flour before but without huge success. So if you have any interesting coconut recipes let me know and I will check them out.

Ok, enough talking about flours, let’s focus on these gluten free oat and raisin cookies baked with Cocozia coconut oil. I love baking with coconut oil. It is great healthier alternative to butter or any other oil. Cocozia is 100% organic extra virgin unrefined cold-pressed coconut oil. It is NON-GMO and this is very important for me and my family.

The other thing that I’m very concerned in my life are pesticides. I try to limit them as much as I can in our food. However, you don’t have to worry about pesticides while you bake with Cocozia coconut oil. It is free of pesticides, bleach and trans fats.

It has a delicate coconut flavor and the whole house smells great while I bake with Cocozia. It is excellent for cooking up to 350 F. Cocozia coconut oil is creamy and it melts easily in microwave. It is packed in glass jar and it smells great.

I usually substitute butter with coconut oil in my baking. I just love the smell and taste of this oil. I used this oil for my oat and raisin cookies and they came out delicious. Gluten free and without refined sugar. Healthy version of raisin cookies.

Oat and Raisin Cookies {Gluten Free}

Ingredients

  • 1/2 cup oat flour
  • 3/4 cup rolled oats
  • 1/4 cup quick oats
  • 1/4 tsp. baking soda
  • 1 egg
  • 1 tsp. vanilla extract
  • 2 Tbsp. Cocozia coconut oil
  • 1/4 cup pure maple syrup
  • 3/4 cup raisins

Instructions

  • Preheat oven to 350 F. Prepare baking pan with parchment paper.
  • In a large bowl mix dry ingredients: oat flour, rolled oats, quick oats and baking soda.
  • In another bowl whisk wet ingredients: egg, vanilla extract, Cocozia coconut oil and maple syrup. Mix with a wooden spoon.
  • Add wet ingredients to the dry ingredients. And mix.
  • Fold in raisins
  • Scoop about 1 tablespoon of batter to form each cookie and lay on baking pan. You can use an ice cream scoop. The batter will be wet, but do not worry.
  • Bake for about 9 - 11 minutes.
